Erin’s Healthy Mushroom Gravy

During the holidays I like to enjoy gravy over my mashed potatoes and meat. Many people believe that gravy is unhealthy for you, this doesn’t have to be true. You can use healthy fats and good gut promoting foods instead of harmful ones. Here is a recipe I modified from my sister Krista.  I use grass fed butter because it has CLA’s, a cancer preventing fatty acid that is only found in grass fed animal products. I also choose bone broth instead of other broths due to the gut supporting properties it contains. Next time you make a gravy don’t automatically think you are eating unhealthy, just choose your ingredients wisely. Here is my favorite recipe that IS healthy and is AMAZING over mashed potatoes or a good quality meat. Enjoy! :O)

Ingredients

  • 12oz Bella Mushrooms, chopped
  • 1/2 Onion, chopped
  • 3 garlic cloves, minced
  • 1 Stick of Grass Fed Butter
  • 2 cups Bone Broth or other broth
  • 1/2 cup Coconut Aminos (can sub with soy sauce)
  • 1/4 Arrowroot or Cornstarch
  • 1/2 Cup Water
  • 2 teaspoons thyme
  • 1 teaspoons oregano
  • 1/2 teaspoon Basil
  • Dash of cayenne
  • Dash of turmeric
  • sea or himalayan salt and pepper to taste

Instructions

In a large skillet, melt the butter and add the onion and mushrooms. Sauté over high heat for 1-2 minutes. Then add the garlic and sauté for another couple of minutes. Reduce heat to medium and add the bone broth and coconut aminos. Mix the water with the arrowroot in a separate bowl. Slowly add the arrowroot mixture into the skillet, stirring constantly while pouring, until desired thickness is achieved. Bring the skillet to a low boil then add all of your seasonings. Reduce heat to simmer for 8-10 minutes stirring regularly until gravy thickens. If your gravy is too thin, add more arrowroot mixture, if gravy is too thick, add water. Enjoy! :O)
